pesto!

aloha!!
Now, I am not one to make dinner on a regular basis.  I wish I was, but I haven't allowed it into my schedule yet (if I make dinner, where will I find the time to stare at the pile of laundry that needs to be put away?!). And if I really must tell the truth, we didn't eat this for dinner. It was lunch. And it was mostly Spencer's idea. 
Announcing, the super delicioso..... 
Pesto/Spinach/Mozzarella Cheese-on-a-Biscuit Delight!! 
Mmmm, I can't think of a better name. 


Oh yeah, plus edemame. Yummy!! 
I ate a sandwich with Pesto at Zupas and it was so so good and so I bought some and I already made a grilled cheese with pesto, spinach and tomatoes on it, so I was trying to come up with something else to make with it and Spencer said, "I know just the thing!" (He may have used different words....I don't remember). He got out the biscuit dough, pesto and mozzarella cheese and that's where I chimed in, "spinach too!" Rememeber, I said it was mostly his idea. If we had tomatoes I think that would have been super good on it as well. 
And the edemame came from Trader Joes. Spen saw it there when he was picking up some mochi!! OH MY GOSH THEY HAVE MOCHI!! If you have forgotten what that goodness is, it looks like this

 and to see just how much we love it, you can go recollect on this post. Anyway, so that was our super good meal of the week...month??......that I wanted to share. Tonight, I am going to hopefully attempt to make these lasagna roll up things I saw on pinterest. Hmmm, we'll see how that goes. Wish me luck.

  1. I am soooooooooo mad at you for not telling me you had a blog! Humph! But I made those roll-ups and they were yummy. I used the recipe that had tomato slices rolled up in there too. it was good.

    Also, ditto on the lasagna roll-ups. I've tried that recipe (I think??) and they are delish. I liked it better than making a whole pan of lasagna in some ways (fun to have single-serving rolls, they cook faster, etc), but sometimes I am just too lazy to do all of that rolling, haha!
    And the eggless cookie dough? Definitely a keeper, too :) I loved it! I usually eat cookie dough even with the raw eggs...but I've been trying to be better about that while I'm pregnant. haha :P

  3. K so I did end up making those lasagna roll ups and I must have not added enough salt to it or something (I never know how much a pinch really means) because mine were not very flavorful :( and I needed to add more marinara sauce..but now I know so next time they will be super delish!
